Bologna sits in the heart of Emilia-Romagna, one of Italy’s richest gastronomic regions. It’s the birthplace of some of the country’s most iconic foods; think ragù, tortellini, mortadella, and Parmigiano Reggiano.
What sets Bologna apart isn’t just the dishes themselves, but the respect for tradition. Recipes are often officially registered, and locals are fiercely protective of authenticity. This isn’t the place for ‘spaghetti bolognese’; order that and you’ll get a polite smile and a very different plate of food!
Tagliatelle al ragù
Forget what you think you know about Bolognese! The real version is served with fresh egg tagliatelle, not spaghetti. The sauce is slow-cooked, rich, and deeply savoury – less tomato-heavy and more about the meat.
Tortellini in brodo
Tiny pasta parcels filled with meat and served in a clear, comforting broth. It’s simple, delicate and deeply delicious. It’s especially popular in the colder months.
Lasagna alla Bolognese
Layered with green spinach pasta sheets, béchamel and ragù, this is lasagna at its most refined. Yes it’s rich, but it’s also beautifully balanced.
Mortadella
Often mistaken as ‘just bologna’ (or baloney to Americans!), the real thing is far superior. Silky, fragrant and studded with fat, it’s best enjoyed in a sandwich or as part of an antipasto platter.
Crescentine (tigelle)
Small round breads served warm with cured meats, cheeses and spreads. Perfect for sharing, and dangerously easy to overeat!
Wander the Quadrilatero
This historic market district is the beating heart of Bologna’s food scene. Narrow streets are lined with delis, bakeries and wine bars. It’s the perfect place to graze; pick up slices of prosciutto, chunks of cheese, and sip on a glass of local wine. Delizioso!
Seek out traditional trattorias
The best meals in Bologna often come from unassuming spots with handwritten menus and no English translations. Look for places filled with locals; that’s always a good sign!
Try an osteria experience
Osterias tend to be more casual, focusing on regional dishes and good wine. Expect hearty portions and a relaxed atmosphere.
Don’t skip the street food!
From piadina (flatbread sandwiches) to fried bites, Bologna’s street food scene is small but perfectly formed, ideal for a quick bite between meals.
